More Vegetables Less Excuses

Maybe you could use a little nudge in finding a solution to one of these pesky excuses.


My excuse:

I don’t have time to prepare vegetables.

My solution:

Buy the bagged, ready-to-eat or ready-to-cook vegetables.  Bagged salads and baby carrots, even pre-peeled and chopped squash can be found in the produce section.


My excuse:

Vegetables spoil too quickly compared to other foods.

My solution:

Since the freshest produce contains the most nutrients, buy enough fresh vegetables for the next 4-5 days only.  Also, buy frozen vegetables, which are as nutritious but give you much more time to use them.


My excuse:

I just don’t like vegetables.

My solution:

Then you need to meet some new vegetables.  Be courageous.  When you’re looking at a food magazine or eating at a restaurant pay attention to vegetables you don’t usually eat.  Choose one and buy it, try it and you’re on your way to finding vegetables you DO like!
