Fresh Cranberry Orange Relish
2 c fresh cranberries
1 orange, quartered and seeded, unpeeled
1/3 c honey
1/2 stalk celery, finely diced
3 T walnuts, chopped
Grind cranberries and orange finely in a food chopper or processor. Mix in honey, dissolving well. Add celery and nuts and mix well. Cover and refrigerate for several hours before serving to allow flavors to blend. Makes about 3 cups.
