A Fresh Blend of Cranberries and Oranges

A unique blend of flavors and textures — sweet, tart and slightly crunchy.  Replace processed cranberry sauce with this refreshing, whole foods relish.  Try it on your leftover turkey sandwiches.

Fresh Cranberry Orange Relish

2 c fresh cranberries

1 orange, quartered and seeded, unpeeled

1/3 c honey

1/2 stalk celery, finely diced

3 T walnuts, chopped

Grind cranberries and orange finely in a food chopper or processor.  Mix in honey, dissolving well.  Add celery and nuts and mix well.  Cover and refrigerate for several hours before serving to allow flavors to blend.  Makes about 3 cups.
