A Good to Eat Sweet Pumpkin Treat

Blend, bake, eat.  Easy!   An autumn dessert that tastes like pumpkin pie but feels like a healthier sweet treat… because it is.

Pumpkin Custard

2/3 c sugar

1/4 c flour

1 tsp baking powder

1 (13 oz) can evaporated milk

2 eggs

1 (16 oz) can pumpkin

1 1/2 tsp pumpkin pie spice

2 tsp vanilla

Preheat oven to 350°.  Coat 9×9-inch cake pan with nonstick cooking spray.  Place all ingredients in a blender and mix until smooth (about 30 seconds).  Pour into pan.  Lightly sprinkle finely chopped walnuts over top, if desired.  Bake 50 minutes, or until knife inserted in center comes out clean.  A dollop of real whipped cream is a nice touch, but optional.  (Yeah, right.)
